This easy NYC-style chocolate chunk cookie recipe will give you two perfectly proportioned cookies. Perfect as a dessert for two, to satisfy a cookie craving or to bake as a gift for someone special! Filled with melted chunks of milk and white chocolate, these cookies can be decorated any way you like. I added pink and red Smarties to turn these cookies into an adorable Valentine’s bake for my husband 😍

Ingredients for this Chocolate Chunk Cookie Recipe for Two

To make these cookies, you will need:

  • Unsalted butter (chilled): Chilled butter helps to maintain a firmer texture in the dough, which is ideal when baking thick NYC-style cookies. The fat in the butter also contributes to the tenderness and flavour of the cookies.
  • Light brown sugar and white caster sugar: These sugars provide sweetness to the cookie dough. Light brown sugar adds a subtle caramel flavour and moisture, while white caster sugar contributes sweetness and gives the cookies crisp edges.
  • Egg yolk (room temperature): The egg yolk adds richness, moisture, and structure to the cookie dough. It contributes to the texture and helps bind the ingredients together.
  • Vanilla extract: Vanilla extract enhances the flavour of the cookies, adding a sweet and aromatic note that complements the other ingredients.
  • Self-raising flour and plain flour: The combination of self-raising flour and plain flour provides the right balance of structure and tenderness to the cookies. Self-raising flour includes a leavening agent (baking powder), helping the cookies rise slightly during baking.
  • Pinch of salt: Salt enhances the overall flavour of the cookies, balancing the sweetness and adding depth to the taste.
  • Baking powder: Baking powder is a leavening agent that helps the cookies rise and gives them a slightly puffy and tender texture.
  • White, milk, or dark chocolate (or a mixture of all) roughly chopped: I prefer using chopped chocolate bars over chocolate chips for two reasons; more flavour and bigger pockets of melted chocolate throughout the cookies.

Quick Recipe Success Tips

  • Tablespoon measurements – given this is a small batch cookie recipe for two, I’ve provided the tablespoon measurements (as well as grams) for the sugars and flours. If you are using tablespoons, make sure each tablespoon of ingredients is levelled off and not heaped.
  • The longer the cookies are frozen the thicker the cookies – for a thick NYC cookie with a crisp exterior and gooey interior these cookies need to be frozen for 2 hours minimum. However, if you’re able to prep ahead or have more time on your hands, the cookies will be even better if frozen for a bit longer. During recipe testing, I found the sweet spot was 4 hours.
  • For even thicker cookies use a pre-heated, dark-coloured baking tray – the heat from the tray will crisp up the edges more quickly and prevent the cookies from spreading too much. Dark baking trays absorb heat more efficiently and give the cookies a crisper exterior.
  • Shape using a cookie cutter – for extra thickness and a perfectly round shape, swirl a large round cutter around the cookies as soon as they come out of the oven.
  • Decorate the cookies any way you like – as soon as the cookies are out of the oven and still warm, you can decorate the tops with colourful Smarties, extra chocolate chips, nuts or sprinkles to jazz them up a bit. I decided to make these cookies for Valentine’s Day, so I pushed a handful of pink and red Smarties into the top for extra cuteness.

Ingredients

  • 40 g Unsalted butter chilled
  • 40 g (2.5 level tbsp) Light brown sugar
  • 20 g (1.5 level tbsp) White caster sugar
  • 1 small/medium Egg (yolk only) room temperature
  • ½ tsp Vanilla extract
  • 40 g (4 level tbsp) Self-raising flour
  • 30 g (3 level tbsp) Plain flour
  • Pinch of Salt
  • ¼ tsp Baking powder
  • 40 g White, milk or dark chocolate (or a mixture of all) roughly chopped

Instructions

Make the cookie dough:

  • Chop the butter into chunks and place in a large mixing bowl. Beat using an electric mixer or wooden spoon for 1 minute until slightly softer and broken up.

    40 g Unsalted butter

  • Beat in the light brown sugar and white caster sugar until just combined. Try not to over-mix at this stage otherwise the butter will become too soft. The mixture should look like chunky wet sand.

    40 g (2.5 level tbsp) Light brown sugar, 20 g (1.5 level tbsp) White caster sugar

  • Mix in the egg yolk and vanilla.

    1 small/medium Egg (yolk only), ½ tsp Vanilla extract

  • In a separate bowl, stir the self-raising flour, plain flour, salt and baking powder together. Add to the butter mixture and fold together to make a thick cookie dough.

    40 g (4 level tbsp) Self-raising flour, 30 g (3 level tbsp) Plain flour, Pinch of Salt, ¼ tsp Baking powder

  • Fold in the chopped chocolate until mixed throughout the cookie dough.

    40 g White, milk or dark chocolate (or a mixture of all)

  • Roll the cookie dough into two balls and place inside a lined small baking tin. Cover with foil and place in the freezer for at least 2-4 hours (the longer you leave them the thicker the cookies will be once baked).

Bake the cookies:

  • Line a large flat baking tray with baking paper and place inside your oven. Preheat the oven to 180°C fan / 200°C conventional with the baking tray inside.

  • Once the oven is preheated, remove the baking tray and place the two cookies on top leaving roughly 10cm space between each.

  • Bake for 15 minutes until golden and firm on the outside edge. The cookies should still be nice and thick and have only spread a little.

    TIP: for extra thickness and a perfectly round shape, swirl a large round cutter around the cookies as soon as they come out of the oven.

  • At this stage, you can decorate your cookies with colourful Smarties, extra chocolate chips, nuts or sprinkles to jazz them up a bit. I decided to make these cookies for Valentine's Day, so whilst the cookies were still warm I pushed a handful of pink and red Smarties into the top.
